While entertaining guests recently for our supper club, we were surprised to see the kids gobbling them up! See, they do please just about everyone!
Step 1 - Prep Dough
This recipe is as simple as thawing and rolling out your puff pastry, then using a 2-inch cookie cutter or biscuit cutter and cutting rounds in the dough.
Tip: you can also cut these into squares, so you don't waste any dough.
Step 2 - Top Dough with Goat Cheese
After you cut the rounds from the dough, transfer them to a parchment-lined cookie sheet, and press down the center, so they don't puff too much.
Place some goat cheese in the center of each round.
Step 3 - Bake
Place the cookie sheet in the oven and bake!
Step 3 - Drizzle with Honey
Once the goat cheese bites are out of the oven, drizzle with honey and garnish with a sprig of thyme, and you're ready to serve!

Easy Goat Cheese and Honey Bites Recipe
Equipment
- rolling pin
- round biscuit or cookie cutter
Ingredients
- 1 package puff pastry
- 6-8 oz. goat cheese
- ¼ cup honey
- 4 sprigs thyme
Instructions
- Follow the package instructions for thawing the puff pastry sheets. Roll out the dough a little to flatten it. Using a 2-inch circle cookie or biscuit cutter (or the rim of a small glass), cut rounds out of the dough.
- Transfer the cut pastry rounds to parchment-lined baking sheets and then gently press your thumb into the center of each one.
- Place 1 teaspoon of goat cheese in the indentation of each round. Bake at 400°F until the pastry is flaky and golden brown, 8 to 10 minutes.
- When the baking sheet comes out of the oven, wait 2 minutes, then drizzle each piece with honey and garnish with a pinch of chopped fresh thyme. Enjoy!

Can I thaw the dough the day before, cut the rounds, place o dollop of goat cheese on and refrigerate overnight ? I would bake it right before my guests arrive.

Can I cut out the pastry rounds, insert cheese, cover, and place in the refrigerator for about an hour . Then finish up when company arrives.
