Why you Need to Try This Strawberry Brownie Dessert!
We're all about Healthy Food Recipes, but when you’re celebrating, baking a cake is definitely in order! I know this Brownie Shortcake satisfies and delights everyone!
Given the red, white, the blue theme of the berries and frosting, you could serve this brownie dessert for Memorial Day, the 4th of July, or all summer long for a festive celebratory Strawberry Chocolate Dessert!

Step-By-Step Directions
Step 1 - Preheat Oven and Prepare Pan. First, preheat the oven to 350 degrees F. and grease and flour in a 9-inch round baking pan.
Step 2 - Make Brownie Batter. Prepare brownie mix as directed on the package and stir in ½ cup sour cream. Pour into a greased pan.
PRO TIP: low-fat or regular sour cream are both great to use.
Step 3 - Bake. Then, bake for 45 minutes or until a toothpick inserted in the center comes out with fudgy crumbs. (Do not overbake.) Cool for 10 minutes and then remove from the pan and cool completely on a wire rack.
Step 4 - Make Filling & Topping and Then Frost. Now, mix the remaining sour cream, Cool Whip, sugar, and vanilla until blended. Cut the brownie horizontally in half. Place the bottom layer on the plate and frost with half the sour cream mixture. Finally, place the next layer and top with the remaining sour cream mixture and fruit.
Expert Tips
With this recipe, you have options.
- BROWNIES. You can use your favorite boxed brownie mix or make one from scratch. These Dark Chocolate Brownies would do the trick (seriously, amazing in this recipe or just by themselves), but you’d probably need to double the recipe to have enough to cut in half and fill with frosting.
- This recipe is best if the brownies are a bit fudgy, so if your boxed brownie mix calls for two eggs, use one. Also, do not overbake! That's how you get your fudgy layers.
- PAN. Making the brownies in a round pan gives the shortcake a shape that You can easily cut in half once it's cooled and then layered with the sour cream frosting.
- Make sure you fully cool the brownie before you cut it in half. Oh, and it's even easier to frost if you place the brownie cake in the fridge for an hour or so.
- FRUIT. All types of berries work for the recipe, but you can also try kiwi or tangerines for a different twist.
Can You Make This Recipe Ahead of Time?
Yes, you make this several hours ahead of time and then serve it when ready.
Alternatively, you can also make the brownies a day or two in advance, make your filling mixture, and assemble the dessert the day you want to serve it.

Brownie Strawberry Shortcake Recipe

Ingredients
- 1 box 18 to 20 oz. brownie mix ( + ingredients to prepare)
- 1 container (16 oz. sour cream, divided)
- 1 cup thawed Cool Whip Whipped Topping
- 1 Tablespoon powdered sugar
- 1 teaspoon vanilla
- 1 ½ pints strawberries and blueberries (washed and dried)
Instructions
- Preheat oven to 350 degrees F. and grease and flour 9-inch round pan.
- Prepare brownie mix as directed on package and stir in ½ cup sour cream. Pour into greased pan.
