How to make cracker cookies step by step

Making Chocolate Peanut Butter Ritz Cracker Cookies is easy. It’s a great recipe to do with your littles or when the family is home for the holidays.

  1. PREP – line a baking sheet with parchment paper or wax paper.
  2. MAKE FILLING – mix the peanut butter and powdered sugar in a medium bowl with a spatula or spoon.
  3. MAKE CRACKER COOKIE – place about a teaspoon and a half of the peanut butter mixture on each cracker. Then, top with another cracker and smush down the filling, but don’t let it ooze over the edges. Place it on the baking sheet.
  4. MELT CHOCOLATE – in a microwave-safe bowl, place chocolate wafers. Melt according to the package instructions. OR microwave at 50% power for 1 minute. Stir, then microwave at 30-second increments stirring after each heating until the chocolate is melted and smooth.
  5. DIP and SET – using a fork, dip the cracker cookie in the melted chocolate turning it to cover all sides. Next, pick it up on the fork and tap it on the side of the bowl to smooth them out and remove any excess chocolate. Place each one on the parchment-lined baking sheet. If using, top with sprinkles while still soft. Let them cool and set for about 20 minutes.

Note: you can also melt your chocolate by using the double boiler method.

Variation Ideas

People always ask, so we say there are various fun ways to mix up this chocolate Ritz dessert. Try some of these ideas.

  • Use Almond Butter instead of peanut butter as the filling.
  • Top with a dash of sea salt. One of our favs!
  • Drizzle with White Chocolate or dip the whole cookie in white chocolate for a twist.
  • Go bold and use dark chocolate melts or dark chocolate chips.
  • Top with chopped Reeses’s Peanut Butter Cups.
  • Drizzle with caramel before serving.

Our favorite thing is to top them with festive sprinkles and munch away during the holidays and if we’re feeling elfish, gift some as well ;).

Can you freeze chocolate covered Ritz?

Yes, Chocolate Covered Ritz can be frozen.

TO FREEZE: Make sure your chocolate is fully set, then place them in an airtight, freezer-safe container.

For best results, be sure to separate each row with wax or parchment paper, so they don’t stick together. Just bring your cookies to room temperature when ready to eat.

Amazingly, the crackers stay pretty crisp!
