What Is Chicken Tikka Masala?

Chicken tikka masala is a beloved dish found in Indian cuisine (although some say it was mainly popularized in the UK’s Indian restaurant scene). The dish is made with marinated chicken cooked in a spiced tomato based sauce that is typically finished with cream. The flavor profile is warm, savory, slightly smoky, and gently spiced rather than overwhelmingly hot. It is typically served with basmati rice or naan to soak up every bit of the rich sauce.

Why Make Chicken Tikka Masala in the Slow Cooker?

Traditional chicken tikka masala often involves marinating, grilling or broiling the chicken, simmering the sauce separately, and carefully combining everything at the right moment. While that method is delicious, it’s not always practical for everyday cooking. That is where the slow cooker comes in. And believe me, this version simplifies the recipe and is every bit as satisfying! Here’s why I love using this chicken tikka masala recipe:

Deeper Flavor Development

Slow cooking allows spices, aromatics, and tomatoes to meld together over time. The result is a sauce that tastes rich and well developed, even though the process itself is simple.

Tender, Juicy Chicken

Chicken thighs, in particular, thrive in the slow cooker. They stay moist and tender, soaking up the sauce instead of drying out. Even chicken breasts can work well when cooked properly and checked at the right time.

Make Ahead Friendly

Slow cooker chicken tikka masala tastes even better the next day. That makes it perfect for meal prep, leftovers, or freezing for future meals.

Key Ingredients That Make This Chicken Tikka Masala Recipe Shine

While the full ingredient list is in the recipe card below, it is worth understanding what makes this dish so flavorful and why each component matters.

Chicken

Boneless, skinless chicken thighs are ideal for slow cooking. They have more fat than breasts, which means more flavor and less risk of drying out. Chicken breasts can be used, but you may need to adjust the cook time and test your chicken pieces earlier.

Yogurt Marinade

Yogurt plays a crucial role in chicken tikka masala. It tenderizes the meat and helps the spices cling to the chicken. Full fat yogurt provides the best flavor and texture, though Greek yogurt can also work.

Aromatics

Onions, garlic, and ginger create the foundation of the sauce. Cooking the onions until soft and lightly golden before adding them to the slow cooker adds depth and sweetness.

Tomatoes

Tomato purée forms the base of the sauce. It provides acidity, body, and that signature vibrant color. Tomato paste is often added at the end to intensify the tomato flavor.

Cream

Heavy cream is stirred in near the end of cooking to give the sauce its signature richness. It softens the spices and creates that luxurious texture people expect from a great chicken tikka masala recipe.

Spices

This dish relies on a blend of warm spices such as garam masala, turmeric, cumin, coriander, paprika, and chili powder. Kashmiri chili powder is especially popular because it adds color and mild heat without overpowering the dish.

Understanding the Spice Profile

One reason chicken tikka masala is so widely loved is that it delivers complex flavor without being aggressively spicy. The spices work together to create warmth rather than heat.

Garam masala adds depth and warmth. Turmeric brings earthiness and color. Coriander and cumin provide a slightly citrusy, nutty backbone. Paprika enhances color and subtle sweetness. Chili powder and optional cayenne allow you to control the heat level.

If you are new to cooking with these spices, do not be intimidated. The slow cooker helps mellow and blend everything, resulting in a balanced sauce that appeals to a wide range of palates. Trust in this tested recipe!

What Makes This a True Chicken Tikka Masala Recipe?

A true chicken tikka masala recipe includes:

  • A yogurt based marinade for the chicken
  • A blend of individual spices rather than a single curry powder
  • Tomato forward sauce balanced with cream
  • Aromatics like ginger and garlic
  • A finish that tastes layered and intentional

This slow cooker version respects those elements while adapting them for ease and consistency.

Slow Cooker Tips for the Best Results

Cooking chicken tikka masala in the slow cooker is straightforward, but a few smart techniques make a big difference.

Brown the Onions First

Taking a few minutes to sauté the onions before adding them to the slow cooker builds flavor that you cannot get from raw onions alone. I know this adds an extra pan to clean, but it’s worth it!

Do Not Add Cream Too Early

Dairy can separate if cooked too long in a slow cooker. Stirring in the cream near the end keeps the sauce smooth and velvety.

Taste and Adjust

Spices mellow as they cook. Always taste before serving and adjust salt, heat, or acidity if needed.

Let It Rest

Allowing the dish to rest for a short time before serving gives the flavors a chance to settle and come together.

What to Serve With Chicken Tikka Masala

Basmati Rice or Brown Rice

Fluffy basmati rice is the classic pairing. It absorbs the sauce beautifully and balances the richness of the dish. I also love making brown rice in the Instant Pot.

Naan or Flatbread

Warm naan is perfect for scooping up every last bit of sauce. Garlic naan is especially good here.

Cauliflower Rice

For a lower carb option, cauliflower rice works surprisingly well and lets the sauce shine. Here’s a recipe I love for cauliflower rice.

Simple Sides

A crisp cucumber salad like this one, roasted vegetables, or lightly sautéed greens make great accompaniments without competing with the main dish.

Is Chicken Tikka Masala Spicy?

The short answer is no, not typically.

Chicken tikka masala is more about warmth and flavor than heat. The spice level is usually mild to medium, and it can easily be adjusted. Using Kashmiri chili powder keeps the dish vibrant without making it spicy. Adding cayenne is optional and allows you to tailor the heat to your preference.

Make It Your Own

Once you are comfortable with the basics, chicken tikka masala is easy to customize.

  • Add more cream for a richer sauce
  • Increase tomato paste for a deeper tomato flavor
  • Stir in extra cilantro for freshness
  • Adjust spices to suit your taste

Because this dish is so forgiving, it is a great recipe to revisit and tweak over time.

Leftovers, Storage, and Freezing

Chicken tikka masala, like a lot of Indian food, is one of those dishes that tastes even better the next day.

Refrigeration

Store leftovers in an airtight container in the refrigerator for up to four days. Reheat gently on the stovetop or in the microwave.

Freezing

This dish freezes beautifully. Let it cool completely, then store in freezer-safe containers for up to three months. Thaw overnight in the refrigerator before reheating.

Meal Prep Friendly

Because it reheats well and pairs easily with rice or vegetables, chicken tikka masala is excellent for meal prep lunches or quick dinners.

Common Mistakes to Avoid With This Slow Cooker Chicken Tikka Masala Recipe

  • Don’t skip the marinade. It adds flavor and tenderness to the chicken.
  • Don’t overcook the chicken, it can make them dry
  • Under seasoning, especially with salt

Paying attention to these details ensures your chicken tikka masala recipe turns out rich, balanced, and satisfying.

Slow Cooker Chicken Tikka Masala Recipe

This slow cooker chicken tikka masala recipe delivers tender chicken in a rich, creamy tomato sauce with classic Indian flavors, made easy in the crockpot.

Ingredients

  • 2 pounds boneless skinless chicken thighs, you can also use breasts
  • 2 teaspoons kosher salt
  • 1 tablespoon fresh lemon juice
  • ¼ cup plain yogurt, full-fat is best, you can also use Greek yogurt
  • 1 tablespoon kashmiri red chili powder, or regular chili powder
  • 1 tablespoon garam masala
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • teaspoon cayenne pepper, optional
  • Pinch of black pepper
  • 1 tablespoon fresh ginger, minced
  • 6 cloves garlic, minced
  • 2 tablespoons oil
  • 2 medium onions, diced
  • 1 ½ cups tomato purée

Before Serving

  • ½ cup heavy cream, more if you like thinner sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon granulated sugar
  • ½ cup cilantro, chopped

Equipment

Instructions

  • Season the Chicken: Cut chicken into large bite-sized pieces. In a large bowl, toss chicken with salt, lemon juice, yogurt, chili powder, garam masala, turmeric, coriander, cumin, paprika, cayenne (if using), black pepper, ginger, and garlic. Let sit for 15–30 minutes if time allows (or proceed immediately).
  • Fill the Slow Cooker: Heat oil in a skillet over medium heat. Add diced onions and cook for 5–7 minutes, until softened and lightly golden. Transfer onions to the slow cooker. Add marinated chicken and tomato purée. Stir gently to combine.
  • Slow Cook: Cover and cook on LOW for 3 ½ to 4 hours, or HIGH for 2-3 hours until chicken is tender and cooked through.
  • Finish the Sauce: Stir in heavy cream, sugar (I find this balances the flavor), and tomato paste. Cook on HIGH for 20 minutes. Taste and adjust salt or spice as needed. Stir in chopped cilantro just before serving. Enjoy!

Notes

  • Chicken thighs stay extra juicy and are ideal for the slow cooker. If using breasts, check at the earlier end of the cooking time.
  • Kashmiri chili powder adds color and mild heat; regular chili powder will be spicier, but still delicious.
  • Serve with basmati rice, naan, or cauliflower rice.
  • Leftovers taste even better the next day and this recipe freezes well for up to 3 months.
