Basic Ingredients for a Ham and Egg Crockpot Casserole
- Eggs - large range free eggs if possible.
- Milk - low-fat or regular milk is fine.
- Salt and Pepper - to taste.
- Garlic Powder - to give your casserole a bit of flavor.
- Frozen Shredded Potatoes - keep them frozen, especially if you are cooking overnight. (aka frozen hash browns)
- Ham - fully cooked and chopped/diced into bite-sized pieces. We love this crock pot ham!
- Onion - chopped. It can be omitted if serving kids or sensitive adults.
- Cheese - shredded sharp cheddar is our go-to to give the casserole plenty of flavor.
How To Make a Breakfast Casserole in Your Crock-Pot
First, gather all your ingredients for your crockpot breakfast casserole recipe. Then, grate your cheese and chop your onions and ham and let’s put this casserole together!

Step 1
Crack your eggs and then whisk together the first five ingredients in a medium bowl.


Step 2
Next, grease or spray your crock with a non-stick spray. Now, place a third of your frozen shredded potatoes in the bottom of a 5-6 quart slow cooker.

Now, layer with a third of each of the following ingredients: ham, onion, and cheese. Repeat the layers, including the potatoes, twice more.



Step 3
Pour your egg mixture over the top of your layers.

Step 4
Finally, cook covered on low heat until eggs are set, and the edges begin to brown, about 5-6 hours. Let stand for about 30 minutes before serving.
When cooking overnight, put your casserole on to cook right before you go to bed. It will switch to warm once it’s done but definitely check it as soon as you wake up.

When cooking for picky eaters, you can serve your casserole as is. However, if you want to add some veggies, try these:
- Broccoli - goes perfectly with the ham and cheese.
- Bacon or Sausage - don’t have ham on hand; go for cooked bacon or sausage. Both are amazing. If you really feel like you need a hearty meal, pick two!
- Red onions - replace the yellow onions with red onions for a slightly different flavor.
- Bell Peppers - any color of pepper will be good.
- Spinach - an excellent way to add some color and nutrition.

How Long Does A Breakfast Casserole Keep?
If you store the recipe properly in the refrigerator in an airtight container, your casserole will be good for about 5 days.
Thankfully, you can cook this recipe a day ahead of time and reheat it when ready to serve to make things stress-free.
To reheat, bake in the oven in an oven-safe dish until heated through or microwave a serving for roughly 1-minute.
Tip: Because the shredded potatoes were previously frozen, we don't recommend freezing the casserole again after being cooked.

We haven't tried doubling the recipe, Nicole. It may require a bit more cooking time for the center to cook through, but not sure how much. It may also depend on how hot your slow cooker gets. Our new one cooks faster than our old model. Let us know how it goes if your try it.

Although we don't do it often, this recipe can be frozen for up to 3 months. When doing that, I suggest cooking it, then cooling completely and storing it in an airtight, freezer-safe container.

We've only tested the recipe in a 6-quart oval crockpot. However, if you're only getting two layers, it may decrease the cooking time.

I don’t think I’ve seen frozen hash brown shredded potatoes in UK supermarket - can I use par-boiled potatoes & shred them myself? Also my cooker doesn’t change settings - could I use a timer at the socket to set cooker on low timing? Thanks.

Hi Sheila, you should be able to use par-boiled shredded potatoes. However, I don't know if it would change the cooking time, so you'd have to check to make sure they're done. I would think setting a timer would be okay to use.

How is this an overnight recipe if it doesn’t cook overnight? To have it ready for breakfast I’d have to get up at 3 or 4 am to put it together.

Starting it as late as possible, cooking it on low, and then letting it sit on the warm setting for an hour or so will get you through the night.
