If there is an easy button for dinner, I want it! Once I saw how simple it is to throw your ingredients in your slow cooker and let it do the work, I made this slow cooker chicken and stuffing on repeat. It's the perfect comfort food (and complete meal) your whole family will love!

Ingredient Notes
Here are the simple ingredients you'll need.
- 3 sliced carrots - carrots make this more of a meal and add to the dish's overall flavor. You need to wash, peel, and then slice them.
- 2 cups green beans - we like to use fresh, but frozen will also work. However, if using frozen, you may want to add them halfway through the cooking time so they don't get too soft.
- 1 ½ - 2 pounds boneless, skinless chicken breasts
- 1 can condensed cream of mushroom soup - no need to dilute it.
- 1 can condensed cream of chicken soup - no need to dilute it.
- ¼ cup of water - or chicken stock (aka ¼ cup of chicken broth)
- 1 6-ounce box of dry stuffing mix - you can use whatever brand you like. However, you do not need to make it per the package instructions. Stove Top Stuffing mix and Pepperidge Farms are favorites you can find at the grocery store.
- ¼ cup butter - this gives the stuffing a nice, rich flavor.

Optional stuffing additions
If you want your dish to taste like traditional homemade stuffing, try adding one or more of these. These ingredients will give it great flavor.
- ½ cup onions, diced
- ½ cup celery, diced
- ½ cup chopped fresh mushrooms
- ¼ cup dried cranberries or apricots (or more to your liking)
- ½ cup cooked, crumbled sausage
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Substitutions
- You can use frozen green beans instead of fresh green beans for your slow cooker chicken recipe. However, they tend to get very soft by the end of the cooking time, so you may want to add them halfway through.
- You can use broccoli instead of green beans. (Broccoli will also get soft by the end of the cooking time.)
- You can use any condensed cream soup, such as cream of celery.
- Sour cream is an excellent substitute for one of the cans of condensed soup.
- If you like, skinless chicken thighs or a whole chicken cut into pieces can be used in place of the chicken breast.
Instructions
- Prep. To start your crock-pot chicken, spray the inside of your slow cooker with non-stick cooking spray.
- Add Veggies. Place the carrots and green beans on the bottom of the slow cooker.
- Add Chicken. Place chicken on top of vegetables and season it with salt and pepper.
- Make Sauce. In a medium bowl, whisk together the condensed cream of mushroom soup, condensed cream of chicken soup, and water. Pour the mixture over the chicken.
- Add Stuffing. Finally, add the dry Stove-Top stuffing mix on top of the chicken and soup mixture. Drizzle with melted butter.
- Cook. Place the lid on the slow cooker and cook on LOW heat for 5-6 hours or 2.5-3 hours on HIGH heat. We prefer to cook on low in a slow cooker to soften the food and allow the flavors to develop.
Pro Tip
You can either shred the chicken and serve it casserole style or serve the chicken, stuffing, and vegetables separately.
My tips and tricks
- This recipe works best in a 6-quart crock pot.
- If using frozen green beans, add them halfway through the cooking time so they don't get too soft.
- You should cook the chicken to 165 degrees F. We use a digital cooking thermometer to check, and it comes out perfectly!
- Most newer crockpots run hot. If you have an older slow cooker, you may need to increase the cooking time.
Storing
REFRIGERATOR - Store your crockpot chicken in an airtight container for up to five days. It's great leftover the next day for lunch!
FREEZER - This is a great recipe to freeze. Simply cook, cool, and then store in an airtight, freezer-safe container for up to 3 months.
