Ground pork  Onions, carrots & garlic Tomato paste, diced tomatoes & beef broth Cream Cheese, sour cream & cheddar cheese


Prep by chopping the onion and mincing garlic.

In a skillet with olive oil over medium heat, brown the ground pork with the chopped onion.

Mix the ground pork and onion, rice, tomato paste, diced tomatoes, minced garlic, diced carrots, and beef broth in the slow cooker. Add spices and cook on LOW 4-6 hours..

With 15 minutes left, mix cream cheese and sour cream. Stir mixture into the meat and sprinkle shredded cheese on top. Cover and let cheese melt.

Once the rice is cooked and cheese has melted, serve the ground pork and rice casserole hot with garnish of green onions or parsley.
