Healthy Strawberry Muffins

Easy & Healthy Strawberry Muffins have wholesome whole wheat, oats, Greek yogurt, and fresh, juicy strawberries. These moist muffins are a delightful breakfast or snack.

How to make these healthy muffins: Preheat oven to 400 degrees. Line muffin pan, and wash and cut strawberries into chunks.

Combine whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Mix well to combine.

Whisk together the olive oil, maple syrup, Greek yogurt, eggs, vanilla extract, and lemon zest until well combined.

Combine wet and dry ingredients and gently fold with a spatula. Gently fold the chopped strawberries into the batter.

Spoon the muffin batter into the prepared muffin cups, top with a few strawberry pieces, and bake for 20 minutes!

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack. Enjoy these strawberry muffins with butter or cream cheese!
