Make the Filling: In a medium bowl, beat together softened cream cheese and orange juice until smooth and spreadable.
Add Mix-Ins: Stir in dried cranberries, crumbled feta, and chopped green onions until evenly combined.
Assemble the Pinwheels: Lay one tortilla flat on a clean surface. Spread about ¼ of the cream cheese mixture evenly over the tortilla, all the way to the edges. Roll it up tightly from one end to the other. Repeat with remaining tortillas and filling.
Chill: Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour (this makes slicing clean and easy + the flavors meld nicely).
Slice and Serve: Unwrap and slice each roll into ½-inch pieces. Arrange pinwheels cut-side up on a platter. I like to slice the roll down the middle and then slice each half into equal portions.
Garnish (Optional): Garnish the serving platter with a fresh rosemary sprig for a festive touch. Use a small star-shaped cutter to cut cheddar cheese stars for the top of the “tree,” if desired.
Notes
Add a pinch of black pepper or a sprinkle of chopped pecans for extra flavor and crunch.
Spinach herb wraps add color, but you can use sun-dried tomato or plain flour tortillas too.
Festive Presentation: Arrange pinwheels in a triangle shape on a platter to look like a Christmas tree, add the rosemary as “garland,” and top with the cheddar “star.” Serve with festive cocktail picks for easy grabbing!
