  • 1 pound washed blackberries fresh or frozen
  • 2-3 tablespoons pure maple syrup depending on sweetness preference
  • 3 tablespoons chia seeds
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice

  • In a medium-sized sauce pan, bring the blackberries to a low boil on medium high heat, stirring frequently. Reduce heat to low and simmer until the berries soften, about 5 minutes. Don't over cook. Leave some berries in chunks for texture.
  • Stir in the maple syrup, lemon juice and chia seeds. Cook jam on low until it thickens, about 5-7 minutes more. Continue to stir the jam while it thickens.
  • Remove the jam from heat and stir in vanilla extract. Let jam cool to room temperature.
  • Transfer mixture to an airtight container, such as a mason jar, and keep in the refrigerator for up to 2 weeks.

The jam can be kept in the refrigerator for up to 2 weeks and it freezes well.
