Easy No Bake Chocolate Peanut Butter Cookies

It was late the other night and my husband saw these No Bake Chocolate Peanut Butter Cookies online and had to have them.

He was so motivated, he made them himself!

That tells you two things. Well, three. One, he really wanted something sweet. Two, these are super easy no bake cookies that anyone can make! And three, he really, really loves chocolate and peanut butter 🙂

No Bake Chocolate Peanut Butter Cookies Recipe

I modified the recipe from the one my husband saw on the Food Network [1] because we love the richness of dark chocolate and this recipe seemed the perfect match. Because of the added dark chocolate, I decreased the sugar a little bit as well. They turned out a-m-a-z-i-n-g!

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup milk
  • 1 stick (8 tablespoons unsalted butter)
  • 1/4 cup unsweetened cocoa powder
  • 1 cup dark chocolate morsels
  • 3 cups old-fashioned rolled oats
  • 1 cup smooth peanut butter
  • 1 tablespoon pure vanilla extract
  • Generous pinch salt

Instructions

  • Line a baking sheet with wax paper or parchment.
  • Bring sugar, milk, butter, cocoa and dark chocolate morsels to a boil in a medium pan over medium heat, stirring occasionally, then let boil for 1 minute.
  • Remove from the heat. Add oats, peanut butter, vanilla and salt, and stir to combine.
  • Drop teaspoonfuls of the mixture onto the prepared baking sheet, flatten slightly.
  • Let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.
  • Enjoy!
