It’s possible to eat great tasting, nutritious food and be totally satisfied. Now that I’m older, I have to watch what I eat so I love finding recipes I enjoy {that don’t have a ton of gluten and carbs to them} and the rest of the family will eat as well. One of my cooking secrets – sneak vegetables in wherever I can.
Sometimes it’s hard to know what to eat besides the staples of bread and pasta without sacrificing substance and appetizing flavor. These Low Carb Dinners are recipes that aren’t hard to make, but deliver on that promise.
This recipe for Vegan Stuffed Avocados by The Whole Serving is gluten-free and is spiced with taco seasoning, so doesn’t scrimp on flavor. It even has a little citrus essential oil for an added boost of yumminess!
What to do with that leftover roasted chicken? Throw together these Cilantro Pesto Chicken Wraps by Physical Kitcheness! The robust flavors and crunch of the romaine lettuce go together perfectly! They are really good for lunch or dinner
Asian flavor is packed into these Pad Thai Broccoli Burgers from Strength and Sunshine! These bean burgers will satisfy just about anyone – maybe even those carnivores out there 🙂

One of my dinner staples is this Healthy Turkey Meatloaf. It uses flaxseed instead of bread crumbs, so it has the extra bonus of containing a super food. It tastes great and freezes well, so I usually make more for another meal later.

Erin, we love eating lighter when it’s hot and any of these would be great for us. Love the idea of using flaxseed in the meatloaf instead of breadcrumbs! Definitely going to try this and sneak in more nutrition!

Erin, this is a fantastic list. With spring coming I’m always looking for low carb meals and this fits the menu perfectly.
In fact tonight we’re getting a rotisserie chicken for dinner, and I can use the leftovers for that cilantro chicken wrap. And I know I’m picking up avocados next time I go to the store to try Celeste stuffed avocados they look delish!
