Eureka! I found it! A healthy recipe every single one of my 4 adorable, yet discerning kiddos actually likes. It’s definitely a Healthy Food Recipe [1] and it’s super easy to make! It’s like finding gold! Quinoa Pizza Bites are delicious and a great alternative to traditional pizza, which is usually high in fat and sodium.

Over the years, I’ve tried a kazillion recipes that I think the kids will like, only to have a ton of leftovers that no one will eat. I literally thought I struck it rich the day every one of the kids thought this recipe was super good! The only other recipe they have all agreed on lately is this yummy Tater Tot Casserole [3].

Maybe it’s because it has the word pizza in it. Who knows. It’s a winner in our house.

Quinoa seeds {yes, it’s a seed, not a grain} contain all the essential amino acids [5] like lysine [6] and small quantities of calcium, phosphorus, and iron. Quinoa also provides small amounts of omega-3 fatty acid and fiber. It’s also considered a complete protein…what other seed or grain can do that? Quinoa is gluten-free and easy to digest, so those with sensitivities can enjoy this one.

How to Make Gluten-Free Quinoa Pizza Bites

With your leftover cooked quinoa [7], these Pizza Bites can be on the table in 20 minutes and only requires one bowl for prep. (That’s my kind of recipe!)

First, preheat your oven to 400 degrees.

Next, place all your ingredients, except your parmesan cheese and pizza sauce in a medium bowl. Stir to combine.

Now, fill the mini muffin cups and you’re ready to bake! Finally, top with parmesan cheese and broil for 30 seconds to a minute. Watch closely so they don’t burn. Your Quinoa Pizza Bites are done when they’re golden brown.

Ingredients

  • 1 cup cooked quinoa
  • 3/4 cup shredded cheese
  • 2 Tablespoons Parmesan cheese
  • 1 egg
  • 1/4 teaspoon salt (to taste)
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • 1/2 cup chopped pepperoni or veggies (optional)
  • Marinara Sauce (for dipping)

Instructions

  • Preheat oven to 400 degrees and then spray a  mini muffin tin VERY well with nonstick spray and set aside.
  • Add all ingredients except parmesan cheese and pizza sauce to a large bowl and stir to combine. Fill mini muffin tin cups to the top with the mixture then place on prepared baking sheet and bake for 13-15 minutes, or until golden brown. 
  • Top with remaining parmesan cheese and broil for about 30 seconds to 1 minute (watch them closely, they burn easily) Let cool for 5 minutes before removing from cups. Serve with warmed pizza sauce.

Notes

Store leftover quinoa pizza bites in an airtight container in the refrigerator for up to five days. Reheat before serving.
