Homemade Strawberry Chia Seed Jam

It’s finally here! Our family waits for it all year. Strawberry season! The sweet goodness of fresh picked strawberries. It’s a family tradition to go to the local u-pick fields and fill our baskets with as many as we can. We braved 90 degree temps last Saturday to pick 17 pounds! {The kids were thrilled :)}  We bake with them, make strawberry shortcake [2] and of course jam. This year, I made several batches of Strawberry Chia Seed Jam.

If you’ve never made jam before, don’t get scared. This recipe is so simple. It requires only four ingredients and there’s no canning involved.

This Strawberry jam is not only easy to make, it’s packed with the goodness of a superfood – chia seeds [4]. Like flax seeds, chia seeds are super high in Omega-3 fatty acids. In addition, you get a healthy dose of antioxidants, fiber, calcium and protein. So much better than sugary store bought varieties.

It’s amazing. No pectin needed. The chia seeds, when exposed to moisture, plump up and thicken the jam naturally. Yum!

This jam is a refrigerator jam – it doesn’t require any canning so no need to sterilize the jars and place in a water bath to seal.

There are a couple ways to make this jam. I’m usually short on time,  so I go easy – no cooking at all. To make it this way, you’ll need a food processor [5] or blender [6].

Ingredients

  • 2 cups strawberries (quartered)
  • cup maple syrup (or to your liking)
  • 3 tablespoons chia seeds
  • 1 tablespoon lemon juice

Instructions

  • Add all ingredients to a blender or food processor, pulse until they're blended to desired texture. Blend more if you want your chia seeds pureed, less if you don't mind them whole.
  • You can reserve some of the strawberries and add them later if you want a chunkier version, like I do.
  • Transfer mixture to an airtight container, such as a mason jar, and allow to set in the fridge for about an hour.
