Family gatherings for holidays {like Easter Brunch} have many moving parts, so we're not particularly eager to spend a ton of time fussing over small details.
If you're like us and like easy and cute recipes, it's time to make Bunny Butt Cupcakes!

Even the kids can help with this one!

Bunny Cupcake Decorations
If you can't find pre-made bunny decorations, or if you're feeling a bit crafty and want to make the bunny feet yourself, melt white candy melts, shape them into a small foot, and decorate them with pink candy melts or white-colored melts with pink food coloring added.

How to Make Bunny Cupcakes
There are many coconut lovers in our house, so we switched out the bunny fur sprinkles for coconut flakes. The switch also gave the bunny cupcakes a better texture. If possible, we think it made them cuter!
First, preheat your oven to 350 degrees. Then, line 24 muffin cups with paper liners. Cute springtime colors work great!
Step 1 - Mix Ingredients
Next, whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Combine the milk, oil, and vanilla extract in a small bowl.
Step 2 - Beat Butter and Sugar
With an electric mixer on medium speed, in another medium bowl, beat the butter and sugar together until light and fluffy, about 3 minutes.
Step 3 - Add Eggs
Add the eggs, one at a time beat well after each addition. Reduce the speed to low and alternate adding the flour mixture and the milk mixture in batches, beginning and ending with the flour mixture. Beat until just blended.
Step 4 - Fill Cupcake Cups
Spoon half of the batter into a ziplock bag. Cut a ¼-inch corner from the bag and fill the liners two-thirds full. Repeat with the remaining batter.
Step 5 - Bake
Now, place in the oven and bake until golden and a toothpick inserted in the center comes out clean, about 15-20 minutes. Remove cupcakes from pan and place on wire rack. Allow to cool completely before frosting and decorating.
For the Butter Cream Frosting
While your cupcakes bake, it's time to make your delicious Vanilla Butter Cream Frosting!
Spoon Marshmallow fluff into a large bowl. Beat with an electric mixer at low speed. Gradually add the butter pieces, beating well after each addition, blend until smooth.
Add the vanilla extract and the ½ cup powdered sugar. Scrape the bowl well to incorporate ingredients. Add more powdered sugar if necessary to get the right texture.
Using a butter knife, frost cupcakes with buttercream frosting and then dip into the bowl with coconut flakes to cover the cupcake's top.
Finally, place bunny decorations on your cupcakes. Done!

Easy Bunny Cupcakes Recipe
Ingredients
- 2 ½ cups all-purpose flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ cup milk

- 1 stick (8 tablespoons unsalted butter, softened)
- 1 cup sugar

- 1 container (16 oz Marshmallow Fluff)
- 3 sticks (¾ lb unsalted butter, softened and cut into 1-inch pieces)
- 1 tsp. vanilla extract
- ½ cup powdered sugar (plus additional if needed)
- Coconut flakes and decorations of your choice

The other great thing about these cupcakes is if you don't want to bake them from scratch, you could always use a packaged mix and frosting, and your holiday dessert is done!
